Low Carb Chocolate

From time to time I make this chocolate.  My husband is diabetic but he still loves chocolate every now and again.  It’s really yummy and you actually find you do not need to eat as much as store bought sugary chocolate.

~Raw yummilicious MILK chocolate~

2/3 cup cashews
2/3 cup agave (maybe just a bit less than this) used =Xylitol here, was good but crunchy
2/3 cup cacao butter (liquified)
1 Tbsp lucuma  (optional)
1 Tbsp mesquite  (optional)
1 tsp. vanilla
4 Tbsp. cacao powder

Liquify cacao butter, I use the microwave, do it in 20 second lots until it’s melted. In vitamix blend ( I use blender) all of the above, and pour into molds or onto wax paper in dish. Freeze ,cut, and enjoy!

I use patty pans (paper cake moulds)

P.S      If you can’t get Cacao butter (you get it at health food) then use Coconut Oil

 The Lucuma and mesquite give it a caramel flavour
