Twin Chocolate and Hazelnut Slice

Here is a really yummmmmy chocolate slice.  Really easy to make and decadent to eat.

Twin Chocolate and Hazelnut Slice

Preparation Time: 15 mins plus 45 mins chilling

Cooking Time: 10 mins                                Serves: 16

Ingredients:

Cooking oil spray, to grease

250g Shortbread biscuits

2 tablespoons cocoa powder

100grams unsalted butter, melted

400grams dark chocolate (70%) cocoa, finely chopped

275mls pure cream

1 cup hazelnuts, toasted, roughly chopped

100grams milk chocolate (40% cocoa) finely chopped

Instructions

Grease a spring form (loose bottom) tin with cooking spray.

Put biscuits in a large zip-lock bag and crush with a rolling pin until fine crumbs form. Transfer to a bowl and stir in cocoa and melted butter. Press into bottom of tin and chill until firm.

Meanwhile, put dark chocolate in a large heatproof bowl over saucepan of simmering water and stir until half melted. (or melt in microwave) When half melted set aside.

Pour 200ml of the cream into a small saucepan and bring to the boil over medium heat. Add to dark chocolate whisking until smooth. Whisk the mixture until thick and aerated. Fold in ¾ cup of the hazelnuts, then spoon onto biscuit base and smooth surface. Chill until firm.

Heat remaining cream in a small saucepan. Once boiling, remove from heat and whisk in milk chocolate until smooth. Transfer to a bowl and put in fridge for ten minutes or until slightly thick and spreadable. Spread chocolate mixture over slice and scatter with remaining hazelnuts. Chill for at least 10 minutes until set.

Serve with cream or icecream.

 

The recipe called for a 30 x 8 cm rectangular loose-bottom fluted tart tin, but I couldn’t find one so used this one and it worked fine.

Portuguese Chicken and Cauliflower Rice

This is one of our favourite recipes.  The chicken can be prepared the day before, then its a quick meal, it just takes about 15 minutes to cook, until chicken is done.

Portuguese Chicken

Serves 2

2 chicken fillets diced

Marinade

1 tablespoon Xylitol or any other sugar free sweetener

2 tablespoons dried oregano

2 tablespoons sweet paprika

4-6 garlic cloves, diced or crushed

1 large red chilli (or 2 small) diced – if you want it hot leave in the seeds, we do

¼ cup olive oil

½ cup lemon juice

Mix all marinade ingredients together and add diced chicken and stir through.  Cover and refrigerate for several hours or overnight.

To cook, put all into a fry pan and sauté until chicken is cooked.  The marinade becomes the sauce.

Spoon over rice or cauliflower rice.   If you like add a leafy green salad.

My husband is diabetic therefore we do not use rice if possible.  Cauliflower rice is a yummy alternative.

 To Make Cauliflower Rice

1. Roughly chop up 1/2 cauliflower into about 3-4cm chunks(stalks and all)
2. Wash pieces and dry really well(any moisture will make the mixture mooshy)
3. Place pieces in a processer, bit by bit, making sure not to overcrowd the container. 
4. Whizz away until it’s looks like rice. Don’t go overboard
5. Put it in a microwave proof dish or in a bowl and cover with cling film
6. Place in the microwave for 6 minutes. Be careful when you take it out because it will be super hot and steamy
7. Fluff up by stirring with the folk and voila you’ve got your very own vegetable rice!
